Cornbread Recipe by Bella Gluten-Free

1 cup gluten-free cornmeal. FINE GRIND
1/2 tsp salt
1 cup buttermilk OR BUTTERMILK ALTERNATIVE*
1/2 tsp baking soda
1/2 cup butter, OR ALTERNATIVE, melted
3/4 cup sugar
2 eggs (OR ELIMINATE EGGS FOR A SLIGHTLY CRUMBLY VERSION)
Preheat oven to 375 degrees.
1. Mix together buttermilk/alternative and baking soda. Set aside.
2. In a large glass bowl, melt butter/alternative in microwave, about 1 minute. Stir in sugar and eggs to slightly cooled butter. Add buttermilk/baking soda and mix just until combined.
3. In a seperate bowl, whisk together cornmeal, Bella Gluten-Free All Purpose Baking Mix and salt. Add wet ingredients and mix until combined. Pour into lightly greased 8x8 baking pan. Bake at 375 degrees until center is set and toothpick comes out clean.
Buttermilk Alternative*: Add 1 tsp of lemon juice or apple cider vinegar to your favorite milk alternative.
