Bella Gluten-Free Pancakes and Belgium Waffles

For me pancakes and waffles are comfort foods. Bella's Gluten-Free All Purpose Baking Mix makes the lightest and fluffiest pancakes on the planet. And they can be made allergen free. Just add your favorite toppings and you have a special family meal in minutes. Makes 8 pancakes or 5 large waffles. 

 

Fluffy Gluten-Free Pancakes

1 cup BELLA GLUTEN-FREE ALL PURPOSE BAKING MIX

1 TBL brown sugar

1/2 tsp baking powder

1/2 tsp baking soda

2 TBL melted butter or butter alternative

2 large eggs or egg alternative

1 cup water, milk or milk alternative

 

Heat pan or griddle on medium to medium high heat.

In medium bowl, mix together BELLA GLUTEN-FREE ALL PURPOSE BAKING MIX, baking powder and baking soda. In another bowl whisk together melted, cooled butter/butter alternative , eggs/egg alternative, sugar and water. Add egg mixture to dry whisking until blended. Pour ¼ to 1/3 cup of batter on to lightly greased griddle or skillet. Cook for about 2 minutes each side.

For Belgium Waffle follow pancake recipe and increase to 1 tsp baking powder, 1/2 tsp baking soda and to 3 TBL of melted butter/ butter alternative. Preheat and lightly grease waffle maker. Follow mixing instructions for pancakes. Serve with warm maple syrup, fruit or nuts if desired. Makes 5 large waffles.

Freezing Instructions: Waffles and pancakes can be frozen in a freezer bag. Reheat in in microwave for 1 minute.

Bella's Pancake/Waffle Variations

Add 1/2 cup fresh or frozen berries to the batter and fold in gently.

Top waffles with chopped nuts.

After pouring cake add a sprinkle of chocolate chips to top of the pancake before flipping cake to the other side.
