Little Pizzas, Pizzette by Bella Gluten-Free
You can top these little pizzas with tomato sauce, shredded parma, ricotta, roasted veggies, butter and honey or your favorite toppings. Makes a great party appetizer.

1 Pkg. Bella Gluten-Free Pizza, Rolls and Focaccia Mix (Prepare dough according to pkg recipe)
Topping ideas: serve the pizettes with any or all of the following
2 cups of your favorite pizza sauce
3/4 cup Parma cheese
1 cup Ricotta cheese
1/4 lb. sauteed Mushrooms in oil with herbs, salt and pepper
1 sauteed onion in olive oil with a splash of balsamic vinegar
1 red pepper, sliced and roasted in oven for 20 minutes
Spicy olive mixture pitted and chopped
butter and honey or sugar

Directions: Mix it Up
• Transfer prepared Bella Gluten-Free Pizza, Rolls and Focaccia Mix dough to a (slightly oiled) large bowl and cover with plastic wrap. Let rise in a warm area for at least 35-45 minutes.
• When dough has risen, with wet or oiled hands, roll dough into 2-3” balls. Flatten with hands or with rolling pin ( between parchment paper) into a small disc.
• Cover the bottom of a heavy skillet with oil or shortening (such as Spectrum Organic Shortening)and heat. When oil or shortening is very hot and slightly smoking, add pizzette and fry, turning once when they are light brown and puffy, about 2–3 minutes per side.
• Blot excess oil on a paper towel. Add sauce or your choice of toppings and serve immediately. Makes 16
Chef’s Notes: Pull dough gently by hand shaping them into a small oval. An uneven thickness creates air bubbles that will puff up when fried them making a perfect pizzette.
