Stuffed Potato Pastries by Bella Gluten-Free

To make this simple recipe you combine cooked potatoes, eggs, salt and pepper and  Bella Gluten-Free All Purpose Baking Mix .
That's it. You can use this pastry to wrap around any filling you can image.

Servings: Makes 20 servings.  •   Prep: 20 mins  • Total: 40 mins

2 lbs potatoes, about 4 medium-size

1 1/2 cups Bella Gluten-Free All Purpose Baking Mix

2 eggs lightly beaten 

1 tsp sea salt 
 
1/2 tsp pepper 

Filling
2 TBL olive oil

1 small
onion, chopped

2 cloves
garlic minced

1/2 lb
ground meat such as buffalo, beef, chicken, or turkey

1/2 tsp
cinnamon

2 TBL
fresh herbs chopped such as parsley or basil
salt and pepper to taste

Directions:
Mix it Up
• Bake potatoes until soft.

• Cut cooked potatoes in half, scoop out and press through a ricer, food mill or colander into a large bowl. Add eggs, salt and pepper and Bella Gluten-Free All Purpose Baking Mix. Knead until you form a smooth dough. Add more Baking Mix if mixture is too wet.

• Heat oil in skillet and saute onions until translucent, about 3 minutes. Add garlic and cook for an additional 2 minutes, Add meat, spices and herbs and cook until meat browns, about 10 minutes. Set aside. For veggie version add 1/2 lb washed spinach and 1/2 lb chopped mushrooms to the onion garlic mixture. Add salt, pepper and herbs and saute for 5 minutes.

• On a large lightly dusted board with a dusted rolling pin (using BGF All Purpose Mix of course) roll out dough to about 1/2 inch thickness. You can use 2 pieces of dusted parchment paper as well. Cut rounds with a 3 " biscuit cutter for small pastries. (Or use a knife to cut a 5-6" circle to create large pastry size and add a TBL of filling.) Brush with egg wash. Add 1 large teaspoon of filling to round, Fold over and crimp edges tighly. If dough breaks, use extra dough to patch the pastry.

• In a deep skillet or wok, heat 1-2 inches oil. Heat until oil reaches 350 degrees or is slightly smoking. Add pastries in batches and cook until golden brown about 5 minutes/side. Serve warm with a side of your favorite dipping sauce. Makes 20 small or 12 large pastries.
