Autumn Apple Fritters by Bella Gluten-Free

Use an ice cream scoop and a vat of hot oil and you will have pipping hot fritters in minutes. 

Servings: Makes 20 servings.  •   Prep: 5 mins  • Total: 15 mins
AppleFritterBGF Ingredients:

1 cup  Bella Gluten-Free All Purpose Flour Mix

2 TBL sugar

1 ½ tsp baking powder

½ tsp nutmeg

½ to 1 tsp ground cinnamon (to taste)

½ tsp  salt

1  egg – lightly beaten, or egg equivalent

½ cup plus 1TBL milk, coconut milk or milk alternative

1 tsp fresh lemon juice (optional)

1 ½ cup diced apples (such as Fuji or Cameo)

Confectioner’s sugar for dusting

Directions:
Mix it Up

Heat several inches of Canola or Spectrum Organic Shortening (Palm Oil) in a deep frying pan or wok to 340 degrees. 

• Combine and mix thoroughly all dry ingredients. Combine and mix all wet ingredients. Add wet ingredients to the dry and stir to combine (do not beat). Add apples to the mixture and fold in to coat all the apples

• Using an 1/8 c ice cream scoop or similar size serving spoon, drop mixture into hot oil. Deposit six to eight at a time to keep oil at constant temperature. Roll fritters over when they have lightly browned at the edges. Roll over a couple of times more to brown evenly, about 5 minutes.  Finished color should be dark amber. Remove with a slotted spoon to a metal cooling rack. Shake confectioner’s sugar over the fritters while still warm.

Chef's Notes:
When deep frying you will want to use an oil with a high smoke.  Lately I have been frying with Spectrum Organic Shortening that is made of 100% Palm Oil which has many more health benefits that just veggie oil. You can find this at your local health food store.
