Ingredients: 1 cup water 6 TBL or ¾ stick unsalted butter or butter alternative 1 TBL sugar pinch of salt pinch of fresh nutmeg 1 cup Bella Gluten-Free All Purpose Baking Mix 1 tsp. xanthan gum 4 large eggs vegetable oil for frying such as canola or coconut oil (about 1 cup) |

Directions: Preheat oven to 200 degrees. Prepare a baking sheets with parchment paper or line with paper towels. Heat oil to the point where a drop of dough will sizzle immediately. Use a deep skillet with a screen cover or a wok for best results. 1. In medium size sauce pan, heat water, butter , sugar, and nutmeg over medium heat until butter is melted.
2. Immediately add Bella Gluten-Free All Purpose Baking Mix and xanthan gum to butter mixture and stir until dough forms. Cook for 2-3 minutes over low heat stirring constantly or until dough begins to dry and pull away from the side of pan. 3. Pour hot flour mixture into your food processor and add eggs, and pulse until all is incorporated. The dough should be smooth and elastic. 4. Scoop a heaping tablespoon or more of the mixture (they will expand when frying) into the hot oil of the wok or deep skillet. Do not over crowd the pan. 5. Cook until golden brown about 2-3 minutes per side. Remove with slotted spoon and place on tray in oven to keep warm. repeat until done. Dust generously with powdered sugar or drizzle with honey.
